NUTRITION

(Continued from page 28) Through carelessness or ignorance of what constitutes a good diet, children are permitted to eat what they want and rarely is it a diet that includes much complete protein. Teen-agers eat too much of what has become known as the "jitter bug" diet: cokes, hot dogs, potato chips and candy. This fills up their stomachs with protein-less food. Most people get in the meat, potatoes, white bread, pie and coffee diet. and the old folks tea and toast, coffee and rolls. No wonder so many Americans are constantly tired and never feel quite well.

Your car would not run well if at all if you did not give it proper fuel, and you can not expect you, your body to run unless it has the materials to run with. Where will we get the protein? Milk has 30 grams of protein per quart. The 550 pound gorilla at the Lincoln Park Zoo in Chicago died, because they thought it was not getting some mysterious substance the animals in the jungle obtained. It weighed as much as three light-heavyweight lifters, yet it was only getting three quarts of milk daily, and milk is just 3 per cent protein.

An egg contains 6 grams of protein, but unfortunately for those of maturer years who wish to avoid animal fat and cholesterol, which causes hardening of the arteries, it is not wise to have too much egg yolk. One egg has as much cholesterol as a full quart of milk, and the cream of milk, butter, and cheese contains the cholesterol which I was in the cream of milk.

You can consider meat and fish as sources of complete protein. Good,

You'll LOVE 'em!

luscious steak, usually has 16% protein, but not entirely complete. It has some of the aminos in such short supply that it will not take care of itself, let alone other food which is also deficient in protein. The better the steak, the more fat, and people should watch their consumption of fat. Meat loaf is 30 to 35% fat, lamb 35 per cent fat, pork nearly 50% fat. So you can't expect to get too much of your protein from meat. The younger you are, the more cholesterol you can handle, but even some very young people get hardening of the arteries, so you have to watch that. There is considerable protein in chicken. Broilers have as little at 3% fat, and some of that drips away Old during the process of broiling. hens have as much as 30% fat. Chicken. is as high as 20 percent protein so if you like chicken you could get a good bit of your protein from that source.

Fish is high in complete protein, but catfish, tuna, salmon, sardines canned in oil, mackerel, blue fish, are high in fat and you should avoid too much of them. The only complete protein among the vegetables is the soy bean. Other beans and peas, potatoes, contain protein, so do grains such as wheat and barley, but they are not complete proteins. You might be lucky if you ate a lot of whole grain, bread, and vegetables, in getting the right combination of protein, but this is a hit or miss affair. If your protein does not contain good quantities of all the amino acids, the protein is not useable. Protein does not remain long in the body. It is either used if complete, or rejected if incomplete. It has little or no value. if it is incomplete.

That's why it is sound nutritional wisdom to have some complete protein

every time you eat anything, whether it be a full meal or a snack.

It has been our work to try to raise the protein standard of our readers, our friends and our lifters. Now that the Olympic committee has given us an order for a complete assortment of Hi-Proteen for the entire Olympic

team, it will be our work to help the entire Olympic team get more complete protein.

First we made Hi-Proteen in powder form. It's primarily a milk drink, and a great many nutritional, appetizing milk drinks can be made with it. We had a sheet detailing a hundred ways to use it. And now we have a Hi-Proteen recipe book which supplies over a thousand recipes to use it.

Then we made the tablets, for their convenience. You get more value from the powder, for first, it costs less, next it can be used with milk, eggs, peanut butter, honey, bananas, nut topping and many other good foods, in milk shakes.

Then we made the Hi-Proteen fudge. It has been very popular and we ship tons of it every week to every state in the union.

And now we have another very worthy product. Something everyone has liked. It was the sensation of the recent annual Strength & Health picnic held at Brookside park. We don't do things hurriedly here in York. We make sure we are right before we go ahead. We have been experimenting with this cookie for a full year. We have been eating a great many of them during this time. We knew from the beginning that they taste well, the first rule of all Hi-Proteen products is that it must taste good. Next that it digests and assimilates well. It fills that demand to a superlative state too. When you have eaten a number of Hoffman's Hi-Proteen cookies, your stomach feels good, just like it has had a wonderful, well balanced meal.

During much of my life I have been a bit allergic to milk, but I learned to drink a lot of it in the last six Hi-Proteen years, and it has come to taste good to me and digest well. I liked the fudge a lot and have almost lived on it at times. But of all the things we have, this Hi-Proteen Cookie seems to feel best in my stomach. Everyone does not like the same thing. But this is something I like. When I take three or four of them with a milk drink or a fudge bar, I really feel like I have had a complete meal.

You can judge the Hi-Proteen cookie best after you have some of them. But I can assure you, that you, and your family will benefit from them, there are an average of 44 cookies in a box. Six of them contain an estimated ten grams of the best protein. If you or a member of your family take 6 of these cookies and a milk drink, only 8 oz. in size, made with three teaspoonsful of powdered Hi-Proteen, you will have 33 grams of protein at an average cost of 19 cents. This is good, tasty protein at a moderate price.

Such a milk drink at noon and one at night, would actually provide all of the minimum amount of protein as recommended by the Food and Nutritional Board of the National Research Council. It will provide a good share of protein for those of larger size and greater activity.

One thing sure, it is a tasty, inexpensive way for you to obtain more of the best protein. In this cookie, the flour

is replaced with Super Hi-Proteen, which greatly raises the protein content of the cookie. It contains 6 times as much protein an average cookie and the usual cookie has no complete protein. The protein contained in Super Hi-Proteen is the best you can get. Each spoonful of it contains an estimated 21⁄2 teaspoonsful of white of egg, which many consider to be the best protein of all. It contains milk pro-

teins of rare value as well as the best quality soya protein. It contains the very best protein which can be consumed. I find Super Hi-Proteen to be so rich, so complete, so filling, that the most of it I can take in dry or milk shake form is two teaspoonsful a day. But in this cookie, I can get more of what I know is the world's best protein. Baked, in appetizing form, I could easily eat a pound of the cookies, and in that pound, I would have a full quarter pound, or 12 teaspoonsful of Super Hi-Proteen. All this must indicate that this cookie will make it possible for you to obtain more of the best protein, at a moderate cost.

We ask you to try it. You will find it in your favorite Special Food Store. If your store does not have it yet, or if there is no store near you, you can order direct from York. Four boxes, nearly 200 cookies, for $3.00 postpaid to your door. I know you and your family will benefit from it. It is another good means of getting more protein into that body of yours which will mean health and well being and more muscle if you are a lifter or body builder.

ing muscle. Someone asked him if that didn't bother his elbows. "Not much," was his reply, "although they get mighty sore some times.' It was logical to assume that a painful reaction might result eventually if he persisted with this exercise. His letter verified our beliefs which added, he was forced to quit training because his entire arm developed a painful soreness that wouldn't permit the slightest movement.

Here was a fellow who, very obviously ignored nature's rebellion against the exercise he thought he should do, in spite of the grinding noises that issued from his joints while he performed the movement. Cracking sounds from shoulders or knees while exercising are quite common and no cause for alarm, they indicate there is a lack of synovial fluid within the joint to properly lubricate it, but exercise will eventually stimulate a better flow and thus eliminate the audible creak. But the sounds our visitor emitted indicated very definitely that the joints were being strained, not trained!

Even ordinary back exercises could prove a menace to those who have weak backs and decide to strengthen them quickly. There's no such thing as "quick" where muscles are concerned and those who seek those short-cuts may find they've "jumped from the frying pan into the fire" instead! Stiffleg dead lifts can be a wonderful corrective exercise properly employed, but they can also be the prime contributing factor to a sore back!
